Learn to make fresh, tender homemade pasta from scratch, perfect for a variety of dishes.

Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • ½ teaspoon salt
  • Extra flour for dusting

Instructions

  1. Combine ingredients: In a large mixing bowl, place the flour and salt. Make a well in the center and crack in the eggs.
  2. Mix to form dough: Use a fork to gradually incorporate the flour into the eggs until a shaggy dough forms.
  3. Knead the dough: Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, until it’s smooth and elastic.
  4. Rest the dough: Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes.
  5. Roll out the dough: After resting, divide the dough into quarters and roll each piece out until it’s thin enough.
  6. Cut the pasta: Cut the rolled dough into strips or use cookie cutters for shapes.
  7. Cook the pasta: In a large pot of boiling salted water, add the fresh pasta and cook for 2-4 minutes.
  8. Drain and serve: Drain the pasta and toss it with your favorite sauce or serve it plain.

Notes

For best results, use room temperature eggs and work quickly to prevent the dough from drying out.
