Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder (for chocolate flavor)
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons milk (adjust for consistency)
  • Food coloring (orange, purple, black)
  • Edible decorations (sprinkles, candy eyes, chocolate decorations)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two cupcake trays with cupcake liners.
  2. Mix together the flour, sugar, cocoa powder (if making chocolate), baking powder, and salt until well combined.
  3. Combine the milk, vegetable oil, eggs, and vanilla extract in another bowl.
  4. Combine the wet mixture with the dry ingredients, mixing just until combined.
  5. Fill the cupcake liners, filling each about two-thirds full. Bake for 15-18 minutes or until a toothpick comes out clean.
  6. Cool the cupcakes in the trays for 5 minutes, then transfer to a wire rack.
  7. Prepare the frosting by beating the softened butter until creamy, then gradually add powdered sugar and mix until smooth.
  8. Frost the cupcakes with colored buttercream and decorate with edible decorations.

Notes

Use room temperature ingredients for better incorporation and avoid overmixing for fluffy cupcakes. Double the recipe for larger gatherings.
